  • Enjoy some post-ride meat & beer in NYC or LA at The Cannibal: Liquor House or Beer & Butcher – Started about 5 years ago by friends and cyclists Christian Pappanicholas and Cory Lane, The Cannibal was a beer-centric bar & butcher restaurant in New York City that grew out of the founders’ travels and riding in Belgium. Aside from the meat-eating reference, the name of course honors legend Eddy Merckx, who has inspired both over the years on & off the bike. They’ve since expanded to LA as well, and just opened a new cocktail bar next to the original Beer & Butcher. Each locale ties back to cyclists in its own way, and they even sponsors an amateur team. Pappanicholas and Lane also still aim to squeeze in rides before heading into the The Cannibal LA every day. They also sent us over a nice meaty recipe for a post-ride snack, as you might expect from a butcher shop. Check it out among other finds this week after the jump…


Advocacy

  • Leigh Donovan and Liv Launch Digital Skills Clinics – As a follow-up to the widely-viewed Mountain Bike Skills 101 series that showcased 10 key beginner-level techniques, Liv & pro skills coach Donovan have come back with an all new instructional video series Intermediate Mountain Bike Skills 201 expanding upon those fundamentals. Filmed at Leigh’s local bike park, Snow Summit in Big Bear Lake, CA it covers skills needed to tackle intermediate trail obstacles like riding rock gardens, off-camber trails, technical cornering and proper jumping technique. Both are definitely worth checking out, and a good way to prep for a new season of riding.
  • Help keep Trips for Kids Western North Carolina keep rolling – Stephen Janes in Asheville is the volunteer director of Trips For Kids WNC. They run mountain bike outings for youths who wouldn’t otherwise have the chance to hit the trails. But the truck that Stephen hauls bikes with for the outings and to run the whole show is on death’s door. He’s humbly reaching out through GoFundMe, something he says he is even reluctant to do, to help raise funds for a down payment on a quality truck that he and the organization will cover the rest of. Cooking

  • Lamb tartare, green apple & charred  from The Cannibal, Beer & Butcher – We weren’t just teasing you from the get go, but we got a couple of recipes from The Cannibal’s executive chef Francis Derby and this one seemed like a nice combination of their butcher-shop meat focus, but a bit lighter. Try it out and let us know…

Ingredients:
3oz Chopped lamb, preferably top round ground or hand chopped very fine
1ea Green apple
1ea Leek
1bnch Chive
1tsp Olive oil
½ tsp Lemon oil
1ea Lemon
2bsp Olive oil for leeks
Aged goat cheese

Directions:
1. Finely dice green apple.
2. Split leeks lengthwise & clean. Slice thin & toss with olive oil. Char in very hot cast iron pan ’til dark brown but not burnt. Let cool.
3. Slice chives finely.
4. In a mixing bowl mix together lamb, 1tbsp of green apple, 1tbsp charred leek, 1tsp chive, olive oil & lemon oil. Mix thoroughly so apples & leeks are evenly distributed throughout the tartare. Transfer to plate.
5. Shave the aged goat cheese over the tartare totally covering the meat.
6. Enjoy.
